Be Wary of Zucchini


    There are many things in the garden, that can be trusted to slowly grow and develop.  You can periodically look them over to see if they need anything, and you don’t have to be concerned about them--unlike Zucchini.
    At the beginning, the zucchini plant seems benign, and happy to grow slowly, but don’t be fooled.  One day it will put out its large pretty blooms as if to reassure you that all is well.  In a couple of days, you might discover a small swelling behind the flower, and walk away unconcerned, but don’t be lulled into complacency.
    The next time you check the plant, secretly hidden beneath its big leaves,  you discover a monstrous green colossus.
    As you panic--(What are you going to do with that giant vegetable?), you back away from the plant for safety, and then your eyes spot another enormous zucchini hidden beneath another leaf.  This shocks you into reality--You are going to have to deal with both of these giants, and quickly, because there are more on the way.  Your zucchini plant seems destine to overtake the world.
    Fortunately, the zucchini you see in the photo is now safely contained in canning jars in the pantry, processed into relish.  I love to put Joan’s zucchini relish on my salmon sandwiches, in potato salad, and in tartar sauce.          
    This one zucchini made 5 quarts (liters) of relish, more than enough to get me through the upcoming year.  Now we are faced with another problem:  What are we going to do with all the other giant zucchini’s which are exploding in our garden.  What a fool I was to grow two zucchini plants.
